correction.....
Just a note on filming police in Arizona....you cannot film any closer than 8 feet.
that does make a little more sense....

visitor. ==joanne fr florida-- husband of tipi fame... has safely arrived by noticing larkey amid teh crowded logan airport busses etc-- ( he did well... it was a new thing for him to be so close to  busses)  she has not appearerd yet this morning -- planning to. ride with janine-- i am to deliver her to the meridith farmn at 8:00.. after which i will go buy some steak... because.......
we have all the parts of the sous vide cooking--- joanne has never heard of it eithere.... but we both have read teh directions about this steak boiling-- and it sounds sooooo easy... thT THE PLAN IS TO COOK OUR SUPPER  TO BE DONE BY 5:30 SO WE CAN SHOW ON MAILCALL WHAT HAS HAPPENED TO THE STEAKS..   THE ONLY UNKNOWN PART AT THE MOMENT IS...\

There is two ways of finishing them off... after boiling them in bags... one is to sear them ----you know frypan or use the blowtorch which I do own since I got involved with the rack of lamb episode... so somehow.. the after mail call episode I'm cooking dinner might be very interesting.. please don't call the fire department unless absolutely necessary.

 

there's SOUS VIDE  sounds so simple----- basically put your steak in AN APPROPRIATE plastic bag...  seal it... drop it in this bucket of water which will be maintained at whatever temperature it's set to maintain---in the case of steaks for medium apparently it's about 134 degrees... and it will hold that stake between one and two hours and not overcook it...  some reference is also made to 24 hours and not overcook it... but I think we ought to try for the two hours at the moment.  IT ALL SOUNDS WONDERFUL- AND I CAQN HARDLY WAIT--..ONE PROBLEM IS IF WE COOK THE STEAKS THAT WAY HOW DO WE ADD ANYTHING LIKE POTATOES???  A SECOND POT???  WE MAY BE EATING STEAK AND CANNED BEANS...

 

BECAUSE OF ALL. THE NEW COUNTERS IN THE KITCHEN, THIS COOKING WILL BE DONE ON THE SURFACE OF TEH ANCENT AND HONORABLE  WOOD STOVE’S  CAST IRON SURFACE.  UNFORTNATELY THE CAMERA WILL NOT ANGLE THAT WAY ... BUT IT WILL. BE CLOSE.

 

HOW’S THAT FOR STICKING MY NECK OUT?

 

I DO NOT CONSIDER MY NOODLE MAKING  A DONE DEAL---- I WILL BE AT THAT AGAIN SOON. NOW THAT THE KITCHEN RESEMBLES A DONE DEAL.

OR NEARLY A DONE DEAL.... MY SINGLE HOTPLATE OF RESTAURANT QUALITY ( EXPENSIVE) GAVE UP THE GHOST AND STARTED BLOWING FUSES AFTER ABOUT ONE WEEK’S WORTH...  IT IS A NATIONALLY KNOWN COMPANY SO THEY ARE REPLACING IT IMMEDIATELY.... THANKFULLY I RESCUED IT FROM THE STREET--- SOMEONE PUT IT ON OUR FREEBEE TABLE IN. ERROR... I LIKE TO KEEP OUR STREET OFFERS ON A HIGHER PLAIN THAN  ITEMS SET TO ELECRTRICUTE YOU...   YOU KNOW ...PICTURE FRAMES ETC.. LESS HARMFUL THINGS. IT HAS BEEN LET ON MY GOLF CART--- AND I HOPE SOME HELPFUL PERSON DOES NOT REMOVE IT FROM THERE... I THINN EVERYONE KNOWS IT DOES NOT WORK....MOST WILL RIGHTLY THINK I HAVE FORGOTTEN IT THERE...AND TRY AND THROW IT AWAY AGQAIN--- SOMETIMES OUR EFFICIENCY IS A PROBLEM.
