I have only kind things to say about the suvi cooking ---having had steak yesterday for breakfast lunch and dinner we finished the last of the first piece just after mail call...  and several people gave us hints.. about the cooking...  one thing I had not considered and I'm still not sure whether this is a legitimate study or not I have seen one place that says you should not hold meats between 40 and 1:20 or something for longer than four hours or they'll begin to perk germs or something like that ...   If that is true.  that means this comment about a 24 hour cooking. and holding of steaks needs to be rethought... that 40 degrees rang a bell with me...  something about trucking industry hauling foods being refrigerated below 40 degrees ... there was some small bell that rang there.

 

I  turned in my news article Saturday on the topic of biting and I totally forgot to include a very spectacular biting episode at one Christmas fiasco in Medford mass.. where some teenage boy was heard to say to his friend.  do you wanna see me bite the dog.. at which point he took the ear he was padding and bit hard.. it was diegel who owned the ear.. and he just yelped and didn't bite the kid but I brought my hand down across that kids nose and broke a bone in my hand and the kid let go..  blood everywhere from dog and kid

when you deal with the general public long enough you have one of everything happening.

 

that huge sarah'santa’s  farm deal that we did one year on Boston Common had a lot of really funny things happen... including the fact that there was no way I could leave chickens and goats as sheep. alone in the pens at night in Boston because at least twice someone picked up a goat and tried to get home go home with it.  to prevent that from happening I had a friend at that point who raised attack dogs for the police and I paid her $100 a night to come in and sleep on the bed which I had there anyway for the dogs during the day.. all of jeanine's BU friends covered the display during the day.. one of them bought some very good brownies they were so good I ate two of them which is where I found I'm probably allergic to that  substance which is now legal.. my face got so red and swollen they almost took me out by ambulance but I really didn't want to leave the dogs so I hung  in there swigging Benadryl.  that was the job where Janine took a reindeer into the statehouse and discovered those antlers come off in December and since that's how she was restraining the reindeer it got loose in the statehouse. we were on the common 30 days with those animals and a lot happened and we made a lot of money.   they had provided us with a  huge heated tent---and since I had the dogs bed there I had a place to nap.

I do 129 F for T-Bone or Porterhouse for 3 hours.

If I do not feel like firing up the grill, I do the following.

Dilute a few drops of Liquid Smoke (See attached) in some beef Broth (Careful-a little LS goes a long way!)

Brush this on the steaks then use a blowtorch or very hot pan sear.
