 OCT 8  2022


FIRST OUT OF BED S=CHORE TODAY WILL BE TO  SCIENTIFICALLY ANALYZE THE STEAK I SOUS. VIDE'D YESGTERDAY.  TOUGH JOB BUT SOMEONE HAS TO DO IT,.


 Souis vide cooking -- I did a little experimenting and I have much better things to say about it now ----I had two steaks in the freezer for a very long time ---One was already vacuum packed the other was packed with air involved... so I re bagged/vac what is possibly a large T-bone steak and put that in the pot with the smaller previously vacuum packed New York sirloin both were a generous 1 inch thick there are pretty good hunks of meat frozen solid.  I started that suivie pot somewhere around 10:00 o'clock in the morning maybe and I set. it for 134 degrees Fahrenheit and 8 hours or something and forgot about it for the whole day. it happily gurgled away and by the time I got to mail call I really didn't wanna deal with it at all----so we putTHE 2 BAGS in the refrigerator---- rather odd looking but it was done.. so about 7:00 o'clock last night I took it out of the refrigerator. put a generous chunk of butter in a fry pan on high. add sliced off four or five chunks of the New York sirloin probably 3/8 inch thick ... threw that in the butter probably 15 seconds on a side.. and had New York sirloin as good as anywhere I've ever had it

 

mind you it was minus the happy charcoal deal but it was certainly was medium done very flavorful very tender and all those things you like a steak to be..it was probBLY A COSTCO "USDA PRIME"  .. A BEAUTIFUL PIECE OF MEAT TO BEGIN WITH... -- I AM NOT SURE WHAT THE BIGGER CHUNK IS... ( STAY TUNED)

I'm hoping mark can break his diet and have a chunk of steak somewhere along the line today because that next piece is probably a month worth of three quarter inch slices well maybe not that much but I'm certainly looking forward to this morning's breakfast steak.. if I had to make adjustments I would back off from the 134...  which turned out to be definitely a medium steak I think the next time I'll try for 1:30

 

the pot is still sitting there full of water not sure what I'm going to do next.. Except maybe go read the book about what is possible I cannot imagine eggs... but Judy did buy a dozen yesterday and so therefore I better go read the book-----It's perfectly clean spotless water and maybe I'll just go read the book and see what else I can cook I can't imagine an egg but let's try it um so I will have further reporting to do... otherwise I have to empty that pot scoop by scoop there's no way you could pick it up

 

they must Sell fake charcoal flavor somehow... back to the drawing board

AND I MUST CALL "DIG SAFE"   IF THERE IS TOO MUCH CONCRETE STUCK TO THE POSTS ALREADY, IT WILL EITHER BE A BACKHOE PROJECT.. WITH MORE CEMENT...  CLEAN POSTS WOULD BE A AUGER.. WHICH WE DO NOT YET OWN....
